Salt & Char

Salt & Char is an upscale steakhouse at the Adelphi Hotel in Saratoga Springs, New York, opened in 2016 as the first venture of the Adelphi Hospitality Group. The restaurant was conceived as a partnership between Adelphi Hotel owner Toby Mildé and Chef Gray Kunz, who shared a vision for elevating the culinary culture of the Saratoga region — drawing on the abundance of local farms and purveyors surrounding the city and bringing the same exacting standards Kunz had applied across his career to a historic upstate setting.

de.MO created the original branding and naming for Salt & Char at its launch under Chef Gray Kunz, extending the studio’s long creative collaboration with Kunz across the full range of his restaurant ventures. As with the Adelphi Hotel itself, the branding work shown here represents de.MO’s contribution to the restaurant’s founding.
